Apple Cider Glaze by Amy Topel Yield: 2/3 cup This simple apple cider glaze is wonderful brushed over baked or steamed fish or tossed over steamed carrots or squash. Ingredients 2 cups fresh apple cider 3 tablespoons butter Method Place the apple cider in a small pot and bring to a boil, lower heat to a simmer and continue to cook until it has reduced to approximately 1/4 cup. Remove the pot from the heat, add the butter and allow the butter to melt into the sauce. This sauce can be made ahead of time and gently re-warmed for use.
