Little Explosions of Flavor and Texture -- Perfect for Chicken Salad October 19, 2008

In a chicken salad, these little seeds add delicious taste and fun texture. To make a great chicken salad, boil some boneless, skinless, unfrozen chicken breasts until they are tender. Bring them to boil, turn the heat down, and let them simmer about 20 minutes or until they are done. Chop the meat in large chunks. (I don't really measure this.)
Place the chicken in a bowl. Toss in some good mayonnaise or mayonnaise salad dressing, lime juice, freshly ground black pepper, crushed red pepper, and celery seed. That's basic. Some optional additions would be halved seedless grapes or chopped and lightly toasted English walnuts.
McCormick produces spices of consistent high quality. Even spice mouths will have trouble using six bottles in a timely manner.
