2 out of 5 stars Gluten Free and SCD, yes, but NOT My Top Pick   October 23, 2008

While these arrived fresh, freshness isn't the only hallmark of a quality product. You can get the same results with a good food processor (i.e. a Kitchen Aid). This is NOT a fine, even grind. If I sift the product, I find a lot of chunks. I want a fine EVEN grind when using nut meal/flour (the terms are used interchangeably in the industry) as the main or only flour in my baked goods.

Since this brand is easy to find in many supermarkets, I do recommend it for some uses. It's good for folks who don't do mail order, those non-GF cooks looking to lower the carb count of their bread coatings, and those looking for an easy GF or a no-carb "breading" option, but only when a coarse coating is suitable. For instance I like fine coatings if I'm going to "pan fry" a white/light flesh fish fillet.

When used as the main or only flour for baking, the batter will look lumpy and the finished product will taste a bit gritty. It won't perform well in some recipes because the chunkier nature of the grind will affect the way the batter handles moisture, which could result in a dense rather than light texture. It could also yield products that fall severely upon cooling.

In order words, disappointing outcomes might not be the recipe or your culinary technique, it could be your choice in ingredients!

My family (even the non-celiacs) liked this as pie crust (similar to a graham cracker crust) and used in a crumb toping on a fruit crisp. I continue to experiment with different uses.

This almond flour has been my saving grace! I am on a very strict diet and this is the only flour I can have. Yes, its a little expensive, but its worth it. Its healthy and I have made the best muffins, cookies, breads and pancakes with it. I now have my husband and kids loving all my new goodies as well!!!

5 out of 5 stars EXCELLENT PACKAGING AND EXCELLENT TASTE   August 11, 2007

I USE THIS PRODUCT TO BAKE COOKIES FOR MY HUSBAND. HE HAS TO HAVE LOW SUGARS AND ALMOND MEAL FLOUR IS THE BEST FOR DIABETIC BAKING. IT TAKES TIME TO WORK WITH IT BECAUSE OF THE CONSISTENCY, BUT THE FLAVOR IS GREAT. THE PACKAGING KEEPS IT FRESH. THIS IS THE SECOND BATCH I HAVE PURCHASED FROM BOB'S RED MILL. I WILL DEFINITELY BUY FROM THEM AGAIN AND I HAVE RECOMMENDED BOB'S RED MILL TO SEVERAL OF MY FRIENDS WHO BAKE AS WELL. THANK YOU. C. CIACCIO

Love this stuff! Buy it and bake with it. Buy the George Stella cookbooks (low carb) for the best recipes using Almond meal.
